
The HENDI Japanese Deba knife is a traditional knife used by a chef to prepare a whole fish from cleaning to portioning. Its thickness makes it ideal for filleting fish, cutting through fish spines, removing fin cartilage, or slicing delicate seafood. The Deba knife can also be used to prepare poultry or other meats with small bones or tendons.
