The HENDI Japanese knife Santoku is a Japanese equivalent of a chef’s knife, but slightly thinner and shorter, excelling at cutting in a single downward motion without rocking. “Santoku” means three virtues and refers to the three basic functions of this knife: chopping, dicing, and mincing.
