The HENDI Japanese knife Sashimi is the ideal choice for slicing fish fillets for sashimi and sushi. Its narrow blade is also excellent for skinning and filleting small to medium-sized fish. With this knife it's possible to achieve very thin, almost transparent slices with very little cell damage to the cut product.
